Grilled Zucchini with Herbed Yogurt Dip

Gilling season has officially arrived at Nicura Ranch. There’s nothing like the smell of something sizzling over the flames while the sun sets and the animals start to settle in for the night. While we love a piece of fresh fish or burger, sometimes it’s the simple sides that steal the show. This week’s farm-fresh recipe is grilled zucchini with an herbed yogurt dip. It’s a light, healthy dish that’s perfect as an appetizer or summery side.

With just a few ingredients and a quick turn on the grill, zucchini transforms into something smoky, tender and delicious. Paired with a cool, tangy dip packed with herbs, it’s a dish that disappears fast.

Grilled Zucchini with Herbed Yogurt Dip

Ingredients:

  • 1 cup plain yogurt (get our homemade recipe, here)
  • 2 Tbsp fresh dill, chopped
  • 2 TBSP parsley, chopped
  • 2 tsp lemon juice
  • 1 small clove of garlic, minced
  • salt and pepper, to taste
  • 3-4 medium zucchini, cut in half and sliced lengthwise (to form large wedges).
  • 2 Tbsp olive oil
  • 1 tsp Salt
  • 1 TBSP dried garlic
  1. To make the yogurt dip: stir all ingredients together in a bowl. Chill at least 30 minutes. Serve with warm zucchini.
  2. Preheat grill to medium high heat.
  3. Brush zucchini slices with olive oil. Season with salt and garlic.
  4. Grill 5 minutes per side, until tender but not mushy.
  5. Remove from grill, and place on a serving platter. Serve with yogurt sauce.
