
This week’s farm-inspired recipe takes a sweet turn with a healthy twist. These thin chocolate wafer cookies are rich, fudgey, and deeply satisfying. You will never guess the star ingredient is flaxseed, a nod to one of the powerhouse supplements we feed our horses here at Nicura Ranch. Flaxseed is loaded with omega-3s and known for promoting glossy coats in horses—and equally lustrous hair in humans! These cookies are a delicious way to sneak in some extra nutrients while indulging your chocolate cravings. Bonus: they are gluten-free.
Healthy-as-a-Horse Chocolate Thins (with flaxseed)
Ingredients:
- 3/4 cup almond flour
- 1/4 cup flax meal (ground flaxseeds)
- 1/4 cup + 2 Tbsp cocoa powder
- 1/4 cup + 2 Tbsp sugar
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup coconut oil, melted
- 3 Tbsp milk (dairy or nondairy)
- 2 Tbsp honey
- 1 tsp vanilla
Instructions:
- In a large bowl, combine almond flour, flax meal, cocoa, sugar, baking soda and salt. Stir well.
- In a separate bowl, stir together oil, milk, honey and vanilla.
- Pour wet ingredients into dry and mix well to form a dough.
- Chill dough 1 hour.
- Preheat oven to 300. Grease baking sheet or line a baking sheet with a baking mat.
- Roll dough into 20-24 balls.
- Bake 12 min. The cookies will puff up, but thin out while cooling. Cool completely before removing from pan (chilling them can help with removing them from the pan).
- Store in a covered container 2 days at room temperature, or in the refrigerator for 2 weeks.
Pour a glass of milk and enjoy this yummy and healthy treat!
