
This beautiful summer salad was actually inspired by one offered at the Boone Tavern years ago. (It was so delicious that I ordered 2!) The salad combines 2 farmer’s market staples this time of year: tomatoes with peaches.
It’s incredibly simple, yet elegant enough for a dinner party. Since the salad has few ingredients, you will definitely want to use farmer’s market or garden grown tomatoes, peaches and a great ricotta. The fresh intense flavors are key to the dish
Tomato, Peach & Ricotta (serves 4)
- 3 Large Beefsteak Tomatoes
- 3 Peaches
- 1 1/3 cup ricotta cheese
- Spring mix greens
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 tsp honey
- salt & pepper
Cut the tomatoes and peaches into quarters, giving you 12 wedges of each.
In a bowl, toss the salad greens with salt and pepper, olive oil, balsamic vinegar and honey.
To plate, spread 1/3 cup of ricotta cheese on each plate. Place salad greens, in a line, down the middle of each plate. Add 3 tomato wedges to one side and 3 peach wedges to the other. (Optional: sprinkle a pinch of salt over the tomatoes).
